Instructions

  1. Preheat oven to 180°C (350°F). Grease and line a loaf tin.

  2. In a large bowl, whisk the sugar, eggs, and vanilla until nice and slightly foamy. Then add the pumpkin purée, sourdough starter, coconut oil and mix well until all the wet ingredients are combined.

  3. In another bowl, combine flour, baking powder, pumpkin spice, chocolate chips and salt. Gently fold into the wet mixture.

  4. Pour the batter into the loaf tin.

  5. Make the streusel: in a small bowl, mix flour, sugar, coconut oil, and cinnamon with your fingertips until crumbly. Sprinkle over the batter.

  6. Bake for 45–55 minutes, or until a toothpick comes out clean.

  7. Let cool in the tin for 10 minutes, then transfer to a wire rack.

Serving suggestion
