Chocolate and Pear Cake with Coconut Oil is a recipe that combines the sweetness of pears and the intense and decisive flavor of dark chocolate.
They say "Don't let the farmer know how good cheese is with pears", but pears also go very well with chocolate!
It is truly a delicious combination that gives the palate an incredible experience.
Coconut Oil confers to the Chocolate and Pear Cake a wonderful texture, making it soft and with a hint of coconut that will make your mouth water.
Preparation time: ~65 min
Finely chop the dark chocolate. Whip the sugar with the eggs in a bowl. Combine the coconut oil, yogurt, milk and vanilla and continue mixing. Add the chocolate and finally the sifted flour, the yeast and a pinch of salt, continuing to mix until you obtain a smooth mixture without lumps. Peel the pears and core them. Pour half the mixture into a cake pan previously buttered with coconut oil or use silicone ones. Cut a pear into small pieces and distribute it on the dough. Pour the remaining mixture and decorate it with the other pear (I cut it into slices and distribute them like petals from the center of the cake) Bake in a static oven at 160° for about 50 minutes. Sprinkle with icing sugar or decorate with chocolate chips like I did!
It is also possible to prepare this dessert using the Bimby, the food processor useful in many preparations.
The recipe for Thermomix:
1 – Place the chocolate in the bowl and chop for 10 seconds, Speed 8
2 – Add the coconut oil, sugar, yogurt, milk, eggs and vanillin 40 sec Speed 4
3 – Combine the flour 10 sec Speed 5
4 – Add the yeast and a pinch of salt 10 sec Speed 4
5 – Then continue as for the traditional recipe.
