Valentine's Apericena, a "super" touch to your aperitif
Starting your romantic evening with some appetizers is certainly a nice idea, even more so if it is a finger food original, colorful and rich in micronutrients, as well as flavor!
Soy and Maca Meatballs
Ingredients

- 50g of soy granules
- 1 medium steamed potato
- 150g steamed broccoli florets
- 125g of plain vegetable yogurt
- ½ lemon
- Salt and pepper to taste
- Extra virgin olive oil to taste
- Sunflower oil for frying
Procedure
Tasty fried balls, to be enjoyed dipped in a fresh yogurt sauce: and maca, as we know, is energizing and can add a “spicy” touch to your evening.
Simply add the cooked potato to a blender along with the soy granules and the maca; blend until you get a smooth mixture; if it is too soft, add a few spoonfuls of chickpea flour, seasoning with salt and pepper.
Wetting your hands with a little water, take a small amount of dough and form the meatballs. Heat the oil in a pan and cook the meatballs until they are golden brown; for a lighter result, you can cook them in the oven or in an air fryer.
Separately, prepare the sauce by combining the yogurt with the juice and zest of half a lemon, a teaspoon of extra virgin olive oil, salt and pepper to taste.
Serve the meatballs, skewered on a toothpick if you like, with the previously steamed broccoli and the yogurt sauce for dipping!
