Healthy and light Easter menu with superfoods
Easter is approaching and, with it, the desire to taste something good and tasty. But with spring and the first warm days, we also need something digestible, tasty, that makes the palate happy without weighing it down.
Here are some tips for a Healthy and light Easter menu , signed by one of the most loved and authoritative voices of Italian cuisine: Sonia Peronaci !
Appetizer: Savory honey panna cotta
As a starter for your tasty family lunch, we propose a panna cotta… you understood correctly, a salty panna cotta !
All you need is parmesan, fresh milk and gelatin, with the scent of rosemary and a pinch of salt and pepper, to obtain white domes with a strong flavour.
And to make the tasting even more unforgettable, add a generous spoonful of cream on top of each panna cotta. Manuka Honey and some crunchy walnuts.
First course: fresh cocoa pasta
The cocoa , if it is really good and organic, 100% natural and raw, is a superfood that is not only healthy and rich in micronutrients, but also versatile. After the savory panna cotta, we want to surprise you with another unusual combination: the use of cocoa… in pasta!
Fresh pasta, homemade, is a perfect recipe for Easter , traditional, that immediately makes the table! But think about how much character and elegance there are in a fresh pasta with cocoa : strips or maltagliati, or tagliatelle with cocoa in the dough, seasoned with a rich cheese-based sauce.
Dessert: Coconut oil tarts or matcha chiffon cake?
A shell of very fragrant shortcrust pastry thanks to the unmistakable scents of organic coconut oil It contains a fresh filling made of pineapple slices – fresh or in syrup – caramelized and decorated with candied cherries.
A delight that you can create as a “family-sized” tart to cut into slices, even if the single portions are a very refined and colorful idea: little tarts to eat directly with your hands, like when we were children!
Another really impressive dessert is the Matcha Chiffon Cake : a soft donut, with the bright green and incomparable scent of the Culinary grade matcha tea , so tall and smooth as a cloud!
Follow the step by step video by Sonia Peronaci to create it artfully.
