Usually biscuits are soaked in tea, but in this recipe tea will be the main ingredient of the biscuits: Matcha Tea Biscuits.

The matcha tea is a fine Japanese green tea, which appears as a very fine powder with a scent and intense color.
Its beneficial properties are incredible and for this reason it is increasingly used in cooking, as a natural coloring and in the preparation of desserts and biscuits.

Delicious to dunk in tea, but they are also excellent in milk. For a rich and nutritious breakfast or for a relaxing afternoon snack. Serve them with a light dusting of icing sugar on top to make them even more beautiful!
Sift the flour together with the icing sugar and Matcha green tea. Add the egg yolks, the butter pieces and a pinch of salt and knead until you obtain a homogeneous mixture. Form a loaf, wrap it in cling film and place in the fridge for about 30 minutes. Turn on the oven. Take out the dough and roll it out with the help of a rolling pin (about 1 cm thick). Make biscuits using the molds you like best! Place the biscuits on a baking tray lined with baking paper. Bake in the oven at 180° for about 15 minutes.
They are delicious biscuits to dipped in tea, but they are also excellent in milk.
For a first rich and nutritious breakfast or for a tasty afternoon snack.
To be served with a light dusting of icing sugar on top to make them even more beautiful!
Depending on the processing of this incredible tea you can find 3 different gradations: the Ceremonial, the Premium and the Culinary.
For this recipe I recommend you use the Grado Culinario which is very suitable for the preparation of cake and biscuit recipes.
Or a Premium Grade for a slightly stronger flavour.
The Cerimoniale Grade on the other hand is the most prized, and is used for the preparation of tea.
