What plant do Açai berries come from?

Its scientific name is Euterpe oleracea, Euterpe was one of the Greek muses, while oleracea derives from the Latin olis-oleris which means “vegetable”: a vegetable worthy of semi-divine figures, therefore.

The palm hearts are also called palmitos, can measure up to 60 cm and have a diameter of 2-3 cm and are located above the capital of the palm.

They are considered a delicacy especially in France, but also in the United States. They have a sweet flavor and can be eaten in salads or to prepare delicious soups.

The açaí seeds are large in size and are partly composted to obtain soil. Furthermore, they are used to grow new palm trees, or as pig feed.

Sometimes they are also used to make local crafts.

The processing of Açai berries

The processing of this fruit is still carried out manually today.

The harvesters climb the palm tree with the help of a harness and cut the entire infructescence or shake the plant causing the berries to fall to the ground.

The açai berries are then removed one by one and collected in a basket: the fruits, once collected, are soaked in water, the Acai berries are carefully washed and drained.

Subsequently the Açai pulp is separated from the seed, this process is very difficult and carried out by specialized people.

Inside a pot the fruits are vigorously massaged and the pulp is passed through two square-shaped sieves. The first sieve has larger holes (caroceiro) while the second has finer mesh (paneira fina)and they are placed one on top of the other while the fruits are positioned in the middle.

Pressed also thanks to the use of a little water, the seeds are then placed back in the pot and re-massaged again.

They are pressed again to remove the last remains of pulp from the seeds.
