What is Acai?
The Açaí is a blue-violet coloured berry which originates in the rainforests. Traditionally used by native Brazilians it is now considered a super-food capable of conferring outstanding energy and resistance. Thanks to its powerful beneficial effects, it is no longer used only as a staple food for the Brazilian population, but is also taking Europe by storm.
Taste & Texture
The best açaí berries come from organic farming. The açai fruit has a pleasant taste, similar to that of blueberry and chocolate, and can be thus consumed like any other fruit. However, it is hard to find it on the market in its raw state, even if it is now commercially widespread as a beverage supplements or in powder form.
How to consume Acai
The organic açaí berry powder is a good way to integrate this excellent fruit into your diet. To ensure an easy and pleasant consumption, the açai berry powder must be dissolved in water in smoothies or breakfast drinks.
What is the difference between freeze-dried and spry-dried Acai?
Given that berries undergo deterioration within 24 hours of harvest, it is practically impossible to find them fresh and newly harvested on the market. Accordingly, their consumption in powder form is one of the best ways to enjoy this precious food, provided it has been properly processed. To preserve all nutritional values, berries must be processed or frozen within 24 hours of harvesting. There are two ways to turn açai pulp into powder:
FREEZE DRIED
It is a process of freezing and lyophilisation (also know as freeze-drying), whereby the acai is processed at low temperatures, preserving all the properties of the berry, and keeping the product 100% natural. Although the freeze-dried method is certainly the best one to transform pulp into powder, it is also the most expensive. For this reason, the cost of the powder thus obtained is considerably higher than that processed via the spry-dried method.
SPRY DRIED
In this processing method, the pulp is processed at high temperatures, damaging therefore the nutritional properties, colour, and flavour of the acai. What is more, attaining a soluble and powdered product demands the in-process addition of Maltodextrin, which yields an acai product that is no longer 100% pure and natural.

Açai Bowl
Prep time: ~5 min
Ideal to enjoy for a rich and nutritious breakfast, tasty fruit salad enriched with cereal and dried fruits. All enhanced by açaí powder with blended fruit or yogurt. The texture will be soft and creamy and the flavor delicious.
Ingredients
- 5g açaí powder
- 250g Greek yogurt
- 30g coconut milk
- 15g manuka honey
- 30g coconut
- 1⁄2 banana
- 30g whole grain cereal or muesli
Preparation
Mix yogurt with coconut milk in a bowl. Add the açaí powder and continue mixing until smooth and even. Sweeten with honey and continue stirring. Cut the coconut into thin strips and after peeling the banana cut it into rounds. Spread the fruit on top of the mixture and finally add the cereal or muesli. This dish gives a lot of energy and is perfect for athletes and healthy food lovers.

Açai Smoothie
Preparation time: ~3 min
The term smooth in English means "smooth, well blended" and recalls the consistency that this type of drink should have. It is a thick and creamy fruit puree, to be drunk cold. Of course, there are many different recipes depending on the type of fruit you want to use.
Ingredients
- 5g of açaí powder
- 1 apple
- 3-4 peaches
- 10 strawberries
- 1 banana
- 1 glass of vegetable milk
Preparation
After cutting the apple and peaches into small dice, blend them together with all the ingredients until you get a creamy mixture. If too thick, add a little more milk.

Açai Chia Pudding
Prep time: ~7 min
Prepared with only 5 ingredients and sweetened naturally with fruit! Ideal for breakfast or as a take-away meal for the day.
Ingredients
- 2 tablespoons chia seeds (20g)
- 1/2 cup almond milk or other vegetable milk (125ml)
- 2 scoops açaí berry powder
- 1/2 banana puree
- 1/2 banana cut into rounds 6. 5g pumpkin seeds
- 5g goji berries
- 5 blueberries
Preparation
Put the chia seeds, acai powder, pureed half banana and vegetable milk in a jar. Mix well with a teaspoon to blend all the ingredients. Close with the cap and shake vigorously. Let stand in the refrigerator for 1 to 8 hours. Once opened, complete the recipe with the topping: the sliced banana, pumpkin seeds, goji berries, and blueberries.
