Rice Noodles with Vegetables and Tofu Stir-Fried with Coconut Oil

Ingredients:

  • 2 teaspoons coconut oil

  • 1 teaspoon sesame oil

  • 1 medium onion

  • 4 garlic cloves

  • 225 grams tofu, cubed

  • 1 green bell pepper, cut into strips

  • 1 red bell pepper, cut into strips

  • 225 grams Chinese cabbage

  • 2 tablespoons soy sauce

  • 115 grams rice noodles

  • 1/2 cup coconut strips (optional)

Preparation:

  1. Heat the oils in a wok over medium-high heat. Add the sliced onion rings and crushed garlic, stir-fry until golden.

  2. Add the tofu and bell peppers, previously cut into strips, stirring continuously and cook for 5 minutes.

  3. Add the Chinese cabbage and stir-fry together for another 5 minutes.

  4. Add the soy sauce and coconut strips, mix well, and remove from heat.

  5. Prepare the rice noodles according to the package instructions, drain them, and stir-fry together with the vegetables and tofu.
