What is Matcha?

It is a powdered green tea produced in Japan. Used as a tea for drinking (Ceremonial Grade) or as an ingredient in recipes (Culinary Grade). MATCHA is produced in Japan.

What grade of Matcha is yours?

Ours is a Ceremonial Grade, intended to be prepared as a drinking tea. See method of preparation below.

What is the difference between Premium Grade, Culinary Grade, and Ceremonial Grade?

The Culinary (lower quality) grade is used in recipes and as an ingredient in cooking, Matcha Premium is of lower quality than Ceremonial, but is still an excellent alternative to Ceremonial Matcha and is ideal for adding to milk, yogurt, smoothies or in cooking. Finally, the Ceremonial grade, which is the highest quality, is intended to be brewed traditionally as a drinking tea and is sourced from finely stone-ground, first-crop leaves.

How is it prepared?

Preparation of traditional Matcha consists of adding 80 ml of water at a temperature between 60° and 75° (not boiling temperature) and 1 serving (1g) of Matcha. Shake quickly using a traditional Matcha Wisk or a standard kitchen whisk.

Matcha Green Tea Tiramisu
Preparation Time: ~30 min

Ingredients

2 tbsp Matcha, 250 ml water, sugar

Savoiardi (ladyfingers)

4 eggs, 110 g sugar, 500 g mascarpone

Extra Matcha for dusting

Instructions
Mix Matcha, sugar, and hot water. Dip ladyfingers in tea.
Beat egg yolks with sugar, then add mascarpone.
In another bowl, beat egg whites and fold into the mixture.
Layer cream and soaked ladyfingers in a dish, finishing with cream.
Dust with Matcha and chill.

Matcha Green Tea Cookies
Preparation Time: ~60 min

Ingredients

215 g 00 flour

150 g butter

100 g icing sugar

3 egg yolks

1.5 tbsp Matcha tea powder

Pinch of salt

Instructions
Sift flour, icing sugar, and Matcha.
Add egg yolks, butter, and salt, then knead until smooth.
Shape into a loaf, wrap in cling film, and chill for 30 minutes.
Preheat oven to 180°C.
Roll out dough to 1 cm thick, cut cookies, and place on a baking sheet.
Bake for 15 minutes.
Matcha Green Tea Latte
Preparation Time: ~5 min

Ingredients

250 ml milk

1 g Matcha

Sugar to taste

Instructions
Warm (don’t boil) the milk.
Add Matcha and sugar to a cup, mix with a little hot water until smooth.
Pour in milk. For iced, use cold milk and add ice cubes.
