These delicious Muffins with Coconut Oil, Chocolate and Banana are excellent for a tasty snack especially at this time of year with the arrival of the first cold weather.
Banana is truly perfect paired with chocolate.
The addition of Coconut Oil in the dough gives a consistency fabulous ai Muffins and a scent of coconut delicate and pleasant.

Muffins with Coconut Oil, Chocolate and Banana
Preparation time: ~45 min
Servings for 12 muffins
Ingredients
- 200 grams 00 flour
- 20 grams bitter cocoa
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 200 grams cane (or coconut) sugar
- 1 egg 3 ripe bananas
- 75 ml coconut oil
- 170 grams chocolate chips
- 1 pinch of salt
Preparation
In a large bowl mix flour, cocoa, baking powder, baking soda and salt. In another bowl, mix sugar, egg, coconut oil and the previously mashed bananas until you obtain a smooth mixture. Combine the powdered ingredients with the mixture obtained from the wet ingredients and mix well until you reach a well-blended dough. Finally add the chocolate chips. Pour the mixture into the molds, after having buttered them (if you have silicone ones you won't have to butter them!). Bake in the oven at 180° for about 20-25 minutes. Test with a toothpick to check for doneness (the toothpick must remain clean!) Wait a few minutes before removing the coconut oil muffins from the molds and let them cool before serving.
