Characteristics

Matcha is a highly prized Japanese green tea. Grown in Japan, it comes as a very fine, fragrant powder, but the main characteristic is its truly intense emerald green color. Our Matcha comes from the city of Uji on the southern outskirts of Kyōto Prefecture. The climatic conditions in these areas are optimal for Matcha production.

Ceremonial Degree of First Harvest
Matcha tea represents the essence of green tea. Traditionally used in Japan, it is distinguished from other green teas by its bright green color and flavor. It is also of a higher grade than culinary grade Matcha and than premium grade. Only first harvest leaves that are stone ground are used. The leaves are protected from sunlight for 20 days before being harvested, keeping theanine levels intact and high..

Preparation time: 7 minutes
What You’ll Need

· Matcha
· Chawan, the bowl where everything begins
· Chashaku, the bamboo spoon used to measure
· Chasen, the bamboo whisk that creates the foam
· Hot water at 75–80°C (never boiling)

Each tool has a purpose. Nothing is accidental.
The Preparation

· Warm the tools
Heat the chawan and briefly soak the chasen to soften the bamboo.

· Sift the matcha
Use 1–2 scoops, sifted to ensure a smooth, lump-free texture.

· Add the water
Pour 60–70 ml of hot water; gentle heat preserves the matcha’s character.

· Whisk
Move the chasen quickly in a soft “W” motion until a fine foam forms.

· Enjoy
Pour in a cup or drink directly from the bowl. No distractions. Just presence.

What is the difference between Premium Grade, Culinary Grade, and Ceremonial Grade?

The Culinary (lower quality) grade is used in recipes and as an ingredient in cooking, Matcha Premium is of lower quality than Ceremonial, but is still an excellent alternative to Ceremonial Matcha and is ideal for adding to milk, yogurt, smoothies or in cooking. Finally, the Ceremonial grade, which is the highest quality, is intended to be brewed traditionally as a drinking tea and is sourced from finely stone-ground, first-crop leaves.

How is it prepared?

Preparation of traditional Matcha consists of adding 80 ml of water at a temperature between 60° and 75° (not boiling temperature) and 1 serving (1g) of Matcha. Shake quickly using a traditional Matcha Wisk or a standard kitchen whisk.
