Muesli orBirchermüesli was born in Zurich at the beginning of the twentieth century thanks to the Swiss doctor and nutritionist Maximilian Bircher-Benner, from whom it partially takes its name.
The German word “mues” means puree or, indeed, “mix”, because the original recipe of the pioneer of dietetics combined oat flakes, lemon juice, grated apple and chopped dried fruit.
Initially, it was intended as an idea for a balanced breakfast dedicated to vegetarians, but it soon became popular and arrived on all grocery store shelves.
This mix, both the original one from Dr. Bircher-Benner and all the hundreds of possible personalized combinations, has the advantage of offering a healthy, very balanced and always varied breakfast.
In fact, the base is typically cereals, especially oat flakes, which have a high satiating power and are an excellent source of vegetable proteins. Not only that, dried fruit providesgood fats, just as fresh or dehydrated fruit guarantees a good supply of sugars and energy ready to use.
Combining the properties of the superfood then makes the product even more complete. Cocoa nibs, for example, give a beneficial contribution of fibres and of mineral salts such as magnesium, manganese and phosphorus.
All with a varied and tasty consistency, which mixes crunchy and soft components, even better if dipped into a colorful açai bowl, in yogurt or in your favorite vegetable drink.
Those who think of muesli often confuse it with granola: the difference between the two products, however, is very marked.
Muesli, in fact, is a mixture of cereals, dried and dehydrated fruit, cocoa nibs and coconut flakes, which is consumed raw and naturally.
In this sense, simply combine all the desired ingredients in an airtight glass jar or in a tin can - to ensure conservation - with a correct proportion between the various elements. Cereals, which are the base, must be the majority of the product, while elements with a high calorific value such as dried fruit or raisins must be a minimal quantity of the total.
On the contrary, granola is an American-inspired preparation and, although it has approximately the same ingredients as muesli, it has a different consistency because it is mixed with a sweet part - maple syrup or honey, for example - and then cooked in the oven. A sort of "slab" is obtained which is then broken with the hands to obtain the characteristic and delicious pieces.

Pour the flakes, seeds, cocoa nibs, cinnamon and salt into a bowl. Mix the liquids (maple syrup, barley malt and coconut oil) separately. Combine the liquids with the dry ingredients and mix everything together. Spread the granola on a baking tray covered with baking paper and bake for about 15-20 minutes at 180° until golden brown. Now you can add these irresistible crunchy morsels to milk, almond or soy or mix them with yogurt!
