Açai is a blue-purple colored berry, similar to blueberry, which comes from a palm tree whose botanical name is Euterpe oleracea and has important properties.
In fact, açai has antioxidant properties, helps the regularity of intestinal transit thanks to its high fiber content and intervenes in the metabolism of lipids and carbohydrates.
The açai fruit has a good flavor that resembles a mix between blueberry and chocolate, from its pulp a powder with a beautiful purple color is obtained, which can be used to make drinks, smoothies and in the preparation of many recipes.
Açai ice cream is a fresh and delicious dessert that can be consumed as a nutritious snack or as a dessert after a light meal.

Açai ice cream is mainly composed of banana cut into slices and frozen, which, once placed in the blender, will become the creamy base into which you can mix the Açai powder and finally decorate with the topping you like most.
But if you prefer a tastier recipe that is completely vegan, here's everything you need.

To decorate: Fresh blueberries, cocoa nibs NaturaleBio and mint leaves.
Preparation:
The evening before, place the sliced banana and blueberries in the freezer, then immerse the cashews in the coconut vegetable drink and leave to rest in the refrigerator overnight.
Place the cashews, together with the coconut drink in a blender and blend until a smooth and homogeneous mixture is obtained.
Filter the mixture and then pour it back into the mixer.
Add the banana and frozen blueberries a little at a time and blend until the fruit is well incorporated and the mixture is smooth and creamy.
If the ice cream is too soft you can place it in the freezer to reach the right consistency.
Serve in small bowls with fresh blueberries, mint leaves and cocoa nibs to give a crunchy touch to the dessert!
For those who don't like coconut you can use any other vegetable drink, almonds, rice or oats.
For those who don't like bananas, however, it is possible to obtain a similar creamy result with other types of fruit, always well frozen beforehand, such as strawberries or apricots.
If you want to make the ice cream a little "sweeter", you can sweeten the mixture with cane sugar, maple syrup or with manuka honey.
