Psyllium is a plant that is increasingly used for its properties. The term "Psyllium" is used to indicate the plant belonging to the Plantaginaceae family and mainly comes from India. The part of the plant used is represented by the mature seeds, from which only the external covering is isolated, called the cuticle or, more commonly, the peel.
Psyllium is rich in fibre, the mucilage concentrated in the peel increases its weight when in contact with water, forming a gel which promotes normal volume and consistency of the stool. Furthermore, it has a prebiotic effect, therefore it selectively promotes the growth and activity of one or more bacteria already present in the intestinal tract.
Psyllium husks can be found in various degrees of purity depending on the percentage of presence of foreign bodies. Usually on the market you can find psyllium husks with a purity of around 95-98%. In a blender we put the cherries without stones, the apple juice, the sugar (1 tablespoon), psyllium and blend until a smooth and homogeneous mixture is obtained. Transfer to a saucepan, bring to the boil and cook over low heat for 5 minutes. Turn it off and let it cool completely. We mix the vegetable milk, the chia seeds and the remaining sugar and let the mixture rest in the refrigerator overnight. Place a layer of fruit jelly on the base of the glass, add the chia pudding to fill the glass and complete with a spoonful of jelly, 2 cherries and the granola.

Mix all the ingredients together and let rest for at least 15 minutes. Soak the psyllium in the water and then dissolve the yeast in it. Mix the two flours in a bowl and add the water. Work the mixture well and let it rise in a warm place, covered with a cotton cloth, for 6-7 hours. Knead again, adding the salt and chopped herbs, place everything in a plum-cake mold lined with baking paper and let it rise again for 1-2 hours, always in a warm place. In a bowl combine the almond flour, flax seeds, hemp seeds, hazelnuts, almonds, pecans, sesame seeds, psyllium seed husk and salt and mix everything well. Add the water and oil and mix until everything is well distributed. Transfer to a baking tray previously lined with baking paper and smooth out using a slightly wet spatula.
