Furthermore, the Rosa Canina , with its concentration of nutrients and micronutrients, is truly a panacea at this time of year and with the arrival of the first seasonal ailments!

What it is and why to use it in the kitchen

Rosa Canina is a very ancient species of thorny shrub, belonging to the family of Rosaceae , its botanical name is Rosa lutetiana , and grows spontaneously in many parts of the world.

Also called “thorn rose” or “wild rose”, because it is a plant that adapts well to any terrain and climatic condition.

According to the Belfrit list, the main properties of the dog rose are: antioxidant , that of support and restorative , it also helps the regularity of the intestinal tract

Finally, a special mention goes to the presence of Vitamin C which is found in significant quantities and in a form easily assimilated by our organism.

In fact, the dog rose has immunomodulatory properties precisely because of the presence of Vitamin C which is also very useful in case of iron deficiency, because this vitamin increases its bioavailability and allows for better absorption of the iron contained in foods.

Rosehip berries, also called rose hips , they are more and more appreciated for their properties and are used a lot in cooking in numerous recipes , one of the most famous is rosehip jam.

Recipe: Rosehip Jam

The traditional recipe calls for the use of fresh rosehip berries, but the process is very long and complex, for this reason we thought of an alternative version that is quicker, but which maintains all the nutritional properties of this precious berry intact.

In fact, using the powder, the Rosehip jam can be made all year round and will be really easy and quick to prepare.

To prepare the Rosehip Jam you will only need a few simple ingredients:

Preparation:

Mix the rosehip powder in water and let it soak for at least 12 hours.

Then heat the mixture at low temperature and let it simmer for about 30 minutes. If necessary, you can add more water to prevent it from burning or sticking.

Remove from heat and strain the mixture through a large, fine-mesh sieve. To do this, pour in a small amount of the rosehip mixture and use a spoon to strain it through the sieve. This process takes a little time.

Once the whole mixture has been filtered, you need to add the sweetener, in this case stevia, but you can choose any sweetener, from raw sugar to erythritol, for example. The quantities are not indicated because some people prefer it sweeter and some less, so taste and adapt it to your… gluttony!

Heat again on low heat, stirring continuously to prevent the mixture from burning, and wait until it begins to thicken. If it struggles to thicken, you can add a drop of lemon juice and half a teaspoon of cornstarch or other natural thickener.

Pour the still boiling Rosehip jam directly into the jars (which must be sterilized beforehand) and close them immediately.

The closed jars should be turned upside down and placed on a flat surface, in this way the vacuum will be created for correct conservation. They should be left upside down for about 48 hours, after which the jars can be transferred to the pantry.

Storage tips

When preparing homemade jam it is always mandatory sterilizing glass jars and lids .

The jars should be washed and dried, then placed in a pan with water and a cloth to prevent them from bumping into each other. Then bring the water to the boil for several minutes. Sterilization is necessary to prevent the formation of mold and bacteria.

As regards the conservation in the pantry, you have to consider that homemade jam does not last very long. For this reason, it is advisable not to prepare large quantities. Once opened, however, it should be stored in the refrigerator and consumed within a week.
