There are so many different recipes for this fabulous dish, but for those who love Coconut Oil, the addition of this precious ingredient will make your pancakes truly delicious!

Pancakes with Coconut Oil

Preparation time: ~25 min

For 4 people

Ingredients
  • 1 cup coconut flour
  • 4 eggs
  • 1.5 cup milk of your choice
  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut oil, melted
  • 1/4 teaspoon cinnamon
  • 2 tablespoons raw honey
  • 1/2 teaspoon apple cider vinegar
  • 1/2 teaspoon baking soda
Preparation

Whip the eggs for two minutes and add the milk, vanilla extract, coconut oil and honey. Separately mix the coconut flour and cinnamon together in a medium sized bowl. Combine the two mixtures until you reach a homogeneous batter without lumps and leave to rest for a few minutes. After the batter has rested, slowly add more milk to reach the desired consistency. Add in baking soda and vinegar and mix just until incorporated. Using a ladle, I spoon the batter onto a hot, greased pan, spread the batter and cook for a few minutes on each side (until golden brown on both sides of the pancake). You can serve it hot and add all the ingredients you like most! From the classic maple syrup, to fresh fruit...but also chocolate!! ?
